{Saturday Swap} Peanut Butter Cup Cookies

Welcome to our 2nd Holiday week of Saturday Swap!  We are starting early once more this week because of New Year's.  How do you plan to celebrate???

Today's recipe is one I discovered at Tasty Kitchen.  It's one of my new favorite ways to hunt for new recipes.  SO many great cooks all in one place!

These cookies are so fun to make....

Peanut Butter Cup Cookies
Adapted from EricaSweetTooth.com via Tasty Kitchen

¾ cups Creamy Peanut Butter
½ cups Butter
⅓ cups Light Brown Sugar
⅓ cups Sugar
1 whole Egg
3 Tablespoons Milk
1 teaspoon Vanilla Extract
1-½ cup All-purpose Flour
½ teaspoons Baking Soda
½ teaspoons Salt
1 (12 Oz. Pkg) Miniature Reese's Peanut Butter Cups {I needed more, so recommend 2 bags}

Preheat oven to 350*.

Beat peanut butter and butter together.  Add sugars, egg, milk, and vanilla and beat well.

Mix together flour, baking soda, and salt, in a separate bowl.  Gradually mix into the peanut butter mixture.

Shape dough into 1″ balls and place in an ungreased mini-muffin tin.

Bake 8 minutes. Use this time to unwrap the peanut butter cups.

When cookies are done, press a peanut butter cup firmly in the center of each cookie. Let the cookies sit in the tin for 5 minutes before transferring them to a wire rack to cool.

Happy New Year, friend! I love these cookies... but take the easy way out and use already made peanut butter cookie dough. :-)

Yes--these are one of our favorites and most addictive! I take the easy way out and use the pre-made dough, but no matter how you make them, very YUMMY!

I make these all the time and they are always a hit! However, I use the pre-made peanut butter, roll it in sugar, pop in a mimi muffin tin and presto-they are great!
